There is already some ice cream that melts at a slower rate, but Japanese researchers have now created a type of ice cream that doesn’t seem to melt at all.

Interestingly, this discovery was accidental — they had been using a liquid taken from strawberries, called polyphenol, to make a dessert.

However, when the polyphenol was added to the dessert’s cream, the cream instantly became solid.

This occurred because polyphenol prevents water and oil from separating, allowing the cream to stay firm and keep its shape.

Realizing that polyphenol would have the same effect on other substances, the researchers began using it to make ice cream products that don’t melt.
